I collaborated with food purveyor Indoguna Singapore to produce a video, In Search Of The Best Fiorentina Steak. For the client-sponsored video, I travelled to South Australia with chefs Christopher Millar and Felix Chong from 1-Group to find out how full-blood wagyu is cultivated at Mayura Station from paddock to plate.
I spent two days at the farm understanding the processes in the single-source farm, from growing its own supply of grains and hay to the quirky inclusion of chocolates and sweets into the cattle feed to give the meat a slight nuttiness.
The trip ends with a cooking demo with Australian celebrity chef, Guy Grossi in Melbourne.
